Coconut oil (unrefined, expeller pressed)

Somehow some residual water remained in the product when these jars were filled. Being heavier/denser than oil, it settled at the bottom. There must have been some coconut husk fibers with naturally occurring mold.. It couldn’t grow much with only triglycerides available and without oxygen. From information printed on the front and back: “Unrefined” and “Product of Colombia or Philippines”. Chemical analysis found ketones that possess a paint thinner like odor similar to methyl ethyl ketone. (MEK, aka butanone). Some molds can produce 2-alkanone from fatty acids vis B-oxidation and decarboxylation. A series of 2-alkanones is what gives blue cheese a pungent paint thinner nuance.
