For some reason some residual water remained in the product when these jars were filled. Being heavier/denser than oil, the water settled at the bottom. There must have been some coconut husk fibers with naturally occurring mold.. It couldn’t grow much with only triglycerides available and without oxygen.

Chemical analysis found ketones that possess a paint thinner like odor similar to methyl ethyl ketone. (MEK, aka butanone). Some molds can produce 2-alkanones from fatty acids vis B-oxidation and decarboxylation. A series of 2-alkanones is what gives blue cheese a pungent paint thinner nuance.
